As we all wait for fall and cooler weather, I thought you might enjoy something cold and
delicious to tide you over during this hot month of August.
This recipe for Strawberry Congealed Salad is a Ranch Recipe family favorite.
It has appeared at our family gatherings, and earlier this year I made 3 pans of it to take to
a ladies' luncheon.
If you , like me many years ago, first saw a congealed salad jiggle in the
sunlight
at some special family event, with your little girl eyes level with the picnic table,
then you know they are family works of art.
They are desserts labeled as salads, they are every color of the rainbow,
and they are loaded with hidden treasures.

Strawberry Jello Salad
This is the perfect congealed salad for ladies' luncheons or special family gatherings.

INGREDIENTS:
- 2 (3-oz.) pkgs. Strawberry Jello
- 1 1/2 cups boiling water
- 1 (No. can 2) crushed pineapple
- 1 cup chopped pecans
- 1 pkg. frozen, sweetened strawberries, thawed
- 1 cup sour cream
INSTRUCTIONS:
- Dissolve jello in boiling water. Drain pineapple, reserving juice. Add 1/2 cup pineapple juice to dissolved jello. Add thawed strawberries, pineapple, and nuts (optional). Put half of the mixture into a 9x13 glass pan and place in the refrigerator until set.
- When set, spread the sour cream over the congealed portion. Chill. Then add the rest of the strawberry mixture and return to the refrigerator until set.

This recipe is an oldie but very goodie. Thanks for refreshing my memory about it. I first tasted it when someone brought it to a potluck luncheon where I worked as a secretary at my first job. So that would be about 42 years ago. I had never had anything like it before, I was young (20) years old. It is sweet, but not too sweet, refreshingly cool, and delicious. Perfect for after that big BBQ on Labor Day.
