Ranch Recipe #1: Jalapeno Cheese Rice

My Parents 1950

Sssssshhhh…….
This is my mother’s
Jalapeno Cheese Rice Recipe.
If my friend JB is reading this she is thinking…
“I can’t believe she is sharing this recipe.”

As I work in earnest in finishing the cookbook I am doing for my daughters,
I thought I would share some special recipes with you.

These recipes are what I like to call
Ranch Recipes.

They are all from my mother’s collection of recipes,
and they are reminiscent of
my memories of my parents and their
entertaining of friends and family,
all on a
ranch
in deep South Texas.

Ssshhhhhh……..
This first one is a
secret.
Although you may have had versions of this,
this worn recipe was my mother’s
and my gift to you.
To set the stage and the menu I remember,
you need to imagine
Ray Price, Jim Reeves,  or Ray Charles playing on the stereo,
delicious thick steaks being grilled,
a wonderful salad or side vegetable,
hot bread slathered in butter,
and
Jalapeno Cheese Rice.
1 large chopped onion
1/2 cup cooking oil
2 cups rice
Cook rice and onion in oil in a skillet until the onion is translucent and the rice is light tan.
Heat and add the following to the rice mixture:
1 can beef broth
2 cans of water
Then add:
1/2 pound velveeta cheese
salt and pepper
1 stick butter
3 seeded and chopped jalapenos
(do not touch your eyes!)
Cover the mixture after a light stirring
and simmer for about 30 minutes.

Enjoy!

I feel priviledged that you are sharing not only your memories, but this recipe. You don't have to tell me twice not to touch my eyes...I've made hot sauce and I won't be making that mistake twice!
When you get your recipes all gathered up for your daughters...you might consider publishing a cookbook. I'd buy it...especially if you add some memory talk with each one....really!
Debbie
P.S. You look like your mother...beautiful!

Growing up with an Italian father there was only room in our house for italian cheeses. When I got married and found velveeta it was a match made in heaven. It was melted and put on almost every vegetable I cooked. Some how I gained 15 pounds that first year. I haven't cooked with it since. I might make this recipe though just once. Its a good company recipe (no leftovers) I do miss my old orange friend.

That sounds like a wonderful potluck dish too!
Your parents are so handsome in that photo - it says a lot about the era - what that generation had been through, and they looked the future in the eye with optimism.

Love that photo!!!! Not hard to imagine Ray Price or Jim Reeves - 2 of my dad's favorites! I can't wait to try this recipe out at my own ranch. Thanks for sharing.

Laura, thank you for sharing your family food secrets...I know the man in my life will love this dish...it has a couple of his favorites, rice and jalapeño peppers.
What a sweet picture of your parents.

Sounds yummy. Is it spicey hot with the 3 peppers (I am a wimp)?
Thanks for sharing the recipe.

I'm sure this is as wonderful recipe, but none for me, thanks. I don't do Jalapenos or anything else that's hot and spicy! You Texans though probably nursed on Tobasco as babies!

That sounds really good but I don't think I could do the Peppers...lol Peppers and I are NOT friends..but I think this would be good even without the peppers in it. I love the photo of your parents. How wonderful to have it and to share it here. Diana

Laura, I prepared this recipe for a Super Bowl party tonight. It sure was a big hit. The hostess served tamales and tortilla soup, so it went right along with menu. Thank you so much for sharing one of your mother's favorites. Now it's one of ours!!
