The formula for a wonderful day
for me
includes
rainy, cold weather,
nothing important to do,
phone calls from my girls with
updates on their lives,
Big 12 women’s basketball games
playing on television,
and
tortilla soup.
Thanks to my friend Mary Jo,
I now know about this.
I bought this jar at HEB in the specialty food section
by the ‘talking chef’.
Mary Jo is one of the best cooks I know,
and this soup starter is wonderful.
I added shredded chicken that I stewed (boiled slowly),
sauteed onions,
frozen whole kernel corn,
and black beans (rinsed and drained).
It was that simple.
I topped each serving with
shredded monterrey jack cheese,
and my all time favorite food,
avocado.
It was delicious.
I pulled out my talavera soup bowls
from Dolores Hidalgo,
sat in my favorite chair with a blanket and my soup,
and
I was in heaven.

That sounds like heaven. There are some wonderful things to be said about snuggly soup days.
Sounds perfect to me! What a day:) ENJOY! HUGS!
I will send our rain to you from now on. It makes me weepy. The soup sounds yummy. We just had avocado salad for supper with roast beast!
Sounds like the perfect day! That soup looks and sounds delicious. I am going to have to look for that soup starter. We do not have HEB in our state. :(
So glad you had a heaven-like day! Those days are to be treasured. I always want to stop time when I have one of those days, even moments.:)
Happy Saturday night to you.

glad you had an enjoyable day. The soup looks and sounds yummy - without the avocado - Please. I have tried - but just don't care for it - think it is a texture issue.
Thank goodness no precip. today and we actually had decent temps so was able to get out and accomplish a few things.
Enjoy your evening.

Laura, do you know what I love about you (besides everything) is that you recognize what makes a day perfect!
hugs
You make even a rainy day sound wonderful.
This soup looks wonderful! No HEB here in Georgia but I will look for that soup starter.
Good old comfort food.
That sounds wonderful, as I sit under the skylight and listen to the rain on the roof.
It's so awesome that you recognize a rainy and cold day for what it really can be if we will allow it. I'm afraid we'd often refer to it as a "dreary, cold, rainy and depressing day." Good for you! As always, love your blog!
Cozy warm and scrumptious. Sounds fabulous.
Oh... sounds perfectly delightful & cozy...
& the soup sounds delicious, I will look for that soup starter, Thanks for sharing that tip.
There's nothing better than a rainy day to "excuse" you from doing anything. Its kind of like the world outside your home has stopped.
Laura~ Spoon me out a bowl, would ya? I'll be right over..I'll even bring my own chair...you had me at AVACADO! Hugs- Diana
Sounds like a perfect day indeed.
sounds like a great day...we've been dreary and raining all weekend...have been getting caught up on some movie watching...
Delicious. I love those pretty dishes, too!

Well, I can't say as I'm with you on the cold, rainy or the basketball...but, calls from my kids and avocado anything and I'm happy. Beautiful pictures today!
Wish I had a bowl of that soup right now! Yummm. Sounds like your Saturday was as relaxing as mine. Love those days!
Promise me it tastes just like El Chico's and I'll be in heaven too!
