Vegetable Soup

IMGP0437

The temperature finally dropped yesterday- and even though it is rising steadily today- I am making vegetable soup for football Saturday.

IMGP0156

My self-taught recipe is simple.

IMGP0157

Brown a package of stew meat in 2 tablespoons of vegetable oil. Season with Nature’s Seasoning. Add one coarsely chopped onion and a teaspoon of minced garlic.

Add 1 large can of whole tomatoes and 2 small cans of tomato sauce.

Pour in enough water to fill the pot 3/4 of the way. Add any vegetables you have on hand. Today I added carrots, potatoes , corn, yellow squash, and green beans.

The last step is adding cilantro.

Simple food for a simple Saturday.

  2. Yum, my husband once said he was going to make homemade vegetable soup. He came back from the store with a bunch of canned veggies...I am sure yours is much better!

  7. We had a record snowfall here today. The grass is still green and the leavs have just began to change. One good thing about this, it's officially soup weather! I like your recipe!

  8. It has turned gray and dreary here in KY. The Fall chill in certainly in the air. Love the soup recipe.

  9. I think the process of making soup is relaxing too. Slowly browning meat, chopping onions, carrots, potatoes or whatever veggies you're using... waiting for it to come to a boil, simmering, stirring, adding spices, tasting, the whole process is relaxing.

  17. Hey Laura, sounds so good I can almost smell it. There's nothing like some homemade comfort food!
Girl, thanks for the sweet thoughts and words. I feel exactly the same about you. Certain people I know speak from the bottom of their heart, and you are one. Just like this post... comfortable and unpretentious. Love that...and always love to hear your "take" on things.
Hope it cools down for you soon. We've been pretty chilly up here. But I'm not complaining, this is my favorite time of year!
